Beans can arrive from well-known coffee-growing regions like Ethiopia and Colombia, or sometimes from surprising places like Zambia, which produces around 10,000 bags of bright, floral coffee each year.
Each batch of beans has unique characteristics – from moisture content to density – that influence how it will roast.

After roasting, it’s time for quality control. This involves “cupping” — a formal tasting ritual used to evaluate aroma, flavour, body, and finish
